Cheesy Cauliflower Chicken Rolls

For the Cauliflower Dough:

✔ 1 medium head of cauliflower, cut into florets
✔ 2 large eggs
✔ ½ cup grated Parmesan cheese
✔ ½ teaspoon garlic powder
✔ ½ teaspoon salt
✔ ½ teaspoon black pepper

For the Chicken Filling:

✔ 1½ cups shredded cooked chicken (rotisserie or boiled)
✔ ½ cup light cream cheese or non-fat Greek yogurt
✔ 1 teaspoon dried oregano
✔ ½ teaspoon paprika
✔ 1 teaspoon minced garlic
✔ ½ teaspoon salt
✔ ½ teaspoon black pepper
✔ ½ cup reduced-fat shredded mozzarella cheese

For Topping:

✔ ½ cup reduced-fat shredded mozzarella cheese
✔ 1 tablespoon chopped parsley
