Air Fryer Gluten-Free Pizza Rolls

Instructions

Prepare the Dough:
In a bowl, whisk together the flour, baking powder, salt, and sugar. Stir in the Greek yogurt and 1 egg until a soft dough forms. Knead gently until smooth. Cover and let rest for 1 hour.

Shape the Rolls:
Divide dough into 8 equal portions. Flatten each piece into a small circle. Place 1 tablespoon shredded mozzarella and 3 slices of pepperoni in the center. Fold dough over filling and pinch edges tightly to seal into a ball.

Coat:
In a small bowl, whisk the second egg. Brush each roll with egg wash. Sprinkle Italian seasoning and Parmesan cheese over the tops.

Air Fry:
Preheat air fryer to 375°F (190°C). Lightly spray basket with olive oil. Place rolls in a single layer, leaving space between them. Air fry for 12–15 minutes, until golden brown and crisp.

Serve:
Let cool slightly. Serve warm with marinara sauce for dipping.
