  • 1 tablespoon granulated sugar

  • ½ teaspoon xanthan gum

  • 2 teaspoons baking soda

  • 1 large egg, lightly beaten

  • 200 ml (about ¾ cup + 1 tablespoon) full-fat natural yogurt

  • 100 ml (about ½ cup) milk

  • 1 tablespoon lemon juice

  • Extra gluten-free flour (or rice flour) for dusting
