Preheat & Prep
Heat the oven to 375 °F (190 °C). Line a baking sheet with parchment paper. -
Make Buttermilk Substitute
Stir together the yogurt, milk, and lemon juice. Let sit for a few minutes until slightly curdled. -
Mix Dry Ingredients
In a large bowl, whisk the flour, salt, sugar, xanthan gum, and baking soda. -
Combine
Add the curdled yogurt mixture and the beaten egg to the dry ingredients. Stir until a soft, sticky dough forms. -
Shape the Dough
Lightly flour your hands and work surface. Gently shape the dough into a round—avoid overmixing. -
Score & Dust
Place the dough on the baking sheet. Cut a large “X” across the top and dust with a little extra flour. -
Bake
Bake for about 30 minutes, until golden and the loaf sounds hollow when tapped on the bottom. -
Cool & Slice
Transfer to a wire rack and cool for at least 15 minutes before slicing.
