  • 85 g cold butter, cubed (≈ ⅓ cup + 2 tsp)

  • 4 tablespoons caster (superfine) sugar

  • 75 g sultanas (golden raisins) or chopped glace cherries

  • 175 ml milk (lukewarm)

  • 3 teaspoons lemon juice

  • 1½ teaspoons vanilla extract

  • 1 large egg, beaten (for the dough + egg wash)
