  • ¼ teaspoon cream of tartar

  • 4½ teaspoons granulated sugar

  • 2¼ teaspoons instant yeast

  • ⅓ cup plain yogurt, room temperature

  • 3 tablespoons butter or ghee, melted and cooled

  • 1 whole egg, beaten (≈ 50 g)

  • 1 egg white (≈ 25 g)

  • ¾ cup warm water (≈ 6 fluid ounces; around 95°F)

  • Butter, ghee, or virgin coconut oil for frying each piece
