Ingredients

  • 1¼ teaspoons xanthan gum (omit if flour blend already contains it)

  • 2½ teaspoons baking powder

  • 1¼ teaspoons kosher salt

  • 1⅞ cups (≈ 425 g) plain Greek-style yogurt, room temperature

  • ⅓ cup lukewarm water (≈ 2⅔ fluid ounces), add more if needed for dough to come together easily

For Rolling & Coating

  • 1 cup (≈ 200 g) granulated sugar

  • 1 tablespoon ground cinnamon

  • ¼ teaspoon kosher salt

  • 6 tablespoons (≈ 84 g) unsalted butter, melted

For the Glaze

  • ¾ cup (≈ 86 g) confectioners’ sugar (powdered sugar)

  • 1 tablespoon milk (any kind), plus more by ¼ teaspoon increments if needed to reach desired consistency
