Preheat Oven & Prepare Pan
Preheat your oven to 350 °F (≈ 175 °C). Grease an 8×4-inch loaf pan generously. -
Mix Wet Ingredients
In a large mixing bowl, mash the bananas. Stir in melted butter, sugar, beaten egg, and vanilla extract until well combined. Some lumps are okay. -
Mix Dry Ingredients & Combine
In a separate bowl, whisk together the gluten-free flour, baking soda, baking powder, and salt. Add to the wet mixture and stir just until everything is incorporated. -
Bake
Pour batter into the prepared loaf pan. Bake for 50 to 60 minutes, or until a skewer or toothpick inserted into the center comes out clean. -
Cool & Slice
Let the bread cool in the pan for at least 15 minutes before removing. Cool completely on a wire rack before slicing.
