Ingredients

  • 2 heads garlic (all the garlic!)

  • ½ teaspoon olive oil

  • 2 lbs (≈ 900 g) Yukon Gold potatoes, peeled and cut into chunks

  • 1½ teaspoons kosher salt, divided

  • 4 tablespoons (½ stick) unsalted butter, cubed

  • ⅓ cup whole milk (or more, as needed)

  • ⅓ cup sour cream

  • Freshly ground black pepper, to taste

For optional garlic chips topping:

  • ¼ cup olive oil

  • 2–3 cloves garlic (from the heads above), thinly sliced

  • A pinch of kosher salt
