Mix Dry Ingredients
In a bowl, whisk together gluten-free flour, sugar, baking powder, and salt until well combined. -
Mix Wet Ingredients
In another bowl, whisk milk, eggs, and vanilla until frothy. -
Combine into Batter
Pour wet ingredients into the dry and stir until a smooth, pourable batter forms. -
Prepare to Fry
Heat about 1 inch of neutral oil in a large skillet to 375 °F. Transfer batter to a piping bag or a plastic bag with the corner snipped (¼–½ inch opening). -
Fry the Fries
Pipe 4-inch lines of batter into the hot oil. Fry in batches (4–5 at a time) for about 2 minutes, flip, and cook 1 more minute until golden and crisp. -
Drain & Dust
Transfer to a wire rack or paper towels, then immediately dust with powdered sugar.

Don’t overcrowd the pan — it helps maintain oil temperature.
