Ingredients

For the Cake Layers

  • 250 g dairy-free butter (block style, not spreadable)

  • 250 g light brown sugar

  • 5 medium eggs

  • 1 tsp vanilla extract

  • 250 g self-raising gluten-free flour

  • ¼ tsp salt

  • 1 ½ tsp baking powder

  • 2 tbsp dairy-free milk


Salted Caramel Sauce

  • 1 can (400 g) full-fat coconut milk

  • 175 g light brown sugar

  • 1 tsp vanilla extract

  • 1 tsp sea salt


Dairy-Free Buttercream

  • 150 g dairy-free butter (block)

  • 300 g powdered sugar

  • 2 tbsp of the homemade salted caramel sauce


Topping

  • Dairy-free caramel popcorn

  • Extra salted caramel sauce for drizzling
