Prepare the Oven:
Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan. -
Make the Batter:
In a large bowl, whisk together gluten-free flour, xanthan gum, salt, sugar, and baking powder.
Add milk, eggs, and vanilla extract, and mix until smooth.
Stir in the melted butter until fully combined.
Spread the batter evenly into the prepared pan. -
Prepare the Cinnamon Swirl:
In a separate bowl, mix the softened butter, brown sugar, gluten-free flour, and cinnamon until smooth.
Drop spoonfuls of the mixture over the batter and gently swirl with a knife. -
Bake:
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. -
Make the Glaze:
Whisk powdered sugar, milk, and vanilla extract until smooth. -
Finish:
Pour the glaze over the warm cake. Let it set slightly, then slice and serve.
