Instructions
1. Preheat Oven
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease lightly.
2. Blend the Batter
In a blender or food processor, combine cottage cheese, eggs, cocoa powder, maple syrup (or honey), almond butter, vanilla, salt, and baking soda. Blend until completely smooth.
3. Add Chocolate Chips
Fold in the chocolate chips gently with a spatula (optional but delicious).
4. Bake
Pour batter into the prepared pan and smooth the top.
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
5. Cool & Slice
Let the brownies cool completely (or refrigerate to set) before slicing into 12 squares.
Tips for Best Results
-
For extra fudgy brownies, slightly underbake and allow to cool fully — they set as they chill.
-
Use ripe, creamy cottage cheese for a smoother texture.
-
Add a pinch of espresso powder to deepen the chocolate flavor if desired.
