Prepare the mug
Lightly grease an 8–12 oz microwave-safe mug with cooking spray or a small amount of oil. -
Mix the wet ingredients
Add the almond milk, egg yolk, vanilla extract, vegetable oil, and sugar to the mug. Whisk well with a fork until fully combined. -
Combine dry ingredients
In a small bowl, mix the gluten-free flour, salt, and baking powder. -
Make the batter
Add the dry ingredients to the mug and stir until smooth. Fold in the rainbow sprinkles. -
Microwave
Microwave the mug cake for 90–100 seconds on medium-high power. The cake should rise and set but remain slightly moist. -
Serve
Let the cake cool for about a minute, then enjoy directly from the mug. Optional toppings include whipped cream, ice cream, or extra sprinkles.
