Instructions

  1. Prepare the mug
    Lightly grease an 8–12 oz microwave-safe mug with cooking spray or a small amount of oil.

  2. Mix the wet ingredients
    Add the almond milk, egg yolk, vanilla extract, vegetable oil, and sugar to the mug. Whisk well with a fork until fully combined.

  3. Combine dry ingredients
    In a small bowl, mix the gluten-free flour, salt, and baking powder.

  4. Make the batter
    Add the dry ingredients to the mug and stir until smooth. Fold in the rainbow sprinkles.

  5. Microwave
    Microwave the mug cake for 90–100 seconds on medium-high power. The cake should rise and set but remain slightly moist.

  6. Serve
    Let the cake cool for about a minute, then enjoy directly from the mug. Optional toppings include whipped cream, ice cream, or extra sprinkles.
