Instructions

1. Prepare the Oven

Preheat the oven to 350°F (180°C) and line two baking trays with parchment paper.

2. Melt the Chocolate

Place the chopped chocolate and butter in a heatproof bowl. Melt them together using a microwave or a double boiler. Stir until smooth and allow the mixture to cool slightly.

3. Whip Eggs and Sugar

In a large bowl, beat the eggs and sugar together for 4–5 minutes until the mixture becomes thick, pale, and fluffy.

4. Combine the Batter

Slowly add the melted chocolate mixture to the whipped eggs while mixing continuously until fully incorporated.

5. Add the Dry Ingredients

Sift the cocoa powder and salt into the bowl. Mix gently until the batter becomes smooth and glossy.

6. Add Extra Chocolate

Fold in the chocolate chips or chopped chocolate pieces to enhance the rich chocolate flavor.

7. Chill the Batter

Refrigerate the batter for 6–8 minutes so it thickens slightly and becomes easier to scoop.

8. Shape the Cookies

Using a tablespoon or cookie scoop, drop portions of batter onto the prepared baking trays, leaving space between each cookie.

9. Bake

Bake for 8–9 minutes until the cookies develop a crackled top and slightly puff up.

10. Cool and Serve

Allow the cookies to cool on the tray for 10 minutes, then transfer them to a cooling rack. Serve once completely cooled.
